Restaurant for 14 years. During this time, he has
built up a stable team of professionals including
Peter Cremen, who has been front-of-house
manager for 12 years, and Jon Glasspool, who has
been head chef for 10 years.
This kind of staff commitment is just part
of the reason why the restaurant has earned a
reputation as a premier tourist destination.

all over Australia as well as Asia, the UK and Europe.
This may have more than a little to do with the
exquisite food and seamless service, for which the
staff are always receiving compliments.
Having trained in Italian restaurants, Jon
Glasspool has put together a menu with a strong
Mediterranean influence; this is enhanced by
the recent addition of chef Claudio Tallarico,
sponsored from Rome, Italy.
By sourcing the best seasonal produce, the
chefs are able to create new dishes on a daily
basis, keeping the menu fresh and exciting.
In recent years, Wise Vineyard Restaurant
has also emerged as an extremely popular venue
for weddings and corporate functions; so much
so that the wedding season (October to April)
regularly books out a year in advance.

ceremonies. Four rustic chalets are also
available for accommodation.

for 120 guests for sit-down events, or up to
