The Private Dining Room on the mezzanine level

When privacy is required, the opaque glass doors can
be closed and the space is immediately converted.
The Champagne Lounge is an amazing

For private dining, the lounges disappear behind
cleverly concealed storage areas and a formal, long
table setting with crystal-like, Victorian-inspired
chairs creates a beautiful setting.
The Champagne Lounge is available for
exclusive events Sunday to Thursday evenings,
and Monday to Sunday during the day.
The Must Winebar menu focuses strongly
on fresh West Australian produce. Chef Russell
Blaikie bases the cuisine on classic French bistro
food with a modern touch.
Themed wine dinners are held throughout the
year and include Shin, Shank and Cheek with
Blockbuster Reds, Marseille and Provence -- a
Grand French Tradition, and Rock Lobster and
Must Winebar also hosts week-long celebrations
of rare produce and wine such as Sherry and
Tapas Week, Manjimup Black Truffle Week and
Must Cheese Week.
Catering for specific outside events is also
a specialty -- Must has catered for the Perth
International Arts Festival, as well as corporate
and media-based functions.

THE NUMBERS: The Private Dining Room
caters for up to 42 guests seated or 70
guests for a canape-style function. The
Champagne Lounge caters for up to 26
guests lounge-style or 16 guests seated.
THE FOOD: The cuisine of chef Russell
Blaikie is seasonally based -- contemporary
with provincial French influences. Themed
dinners can be arranged for private events.
THE BEVERAGES: The wine list features
over 600 references, strongly representing
the wines of France, Italy, Australia, New
Zealand, Germany, Austria, Argentina, USA
and South Africa. A dozen whites and as
many reds are poured by the glass, and a
cocktail list includes the classics as well as
some signature concoctions.
THE COMPANY: Established in 2001, Must
Winebar serves French bistro-style food
matched perfectly with a variety of exquisite
wines. The venue has earned a reputation
for its sophisticated yet relaxed approach
to high-quality food and wine. In January
2009, the company opened a second
establishment in the South West. Just like its
sister venue, Must Margaret River is setting
