MORE BANG FOR YOUR BUCK They’ve been around for a long time, but
fireworks continue to wow guests because they evolve with the times. New technology
allows for new types of fireworks and the fact that you don’t get to see them very often
means they’re still a novelty. Fireworks need to be long enough so you don’t miss them
and short enough so guests don’t get a sore neck. Prices for displays vary based on
duration and complexity – the Events Industry Association should be able to connect
you with the experts. Events Industry Association www.eia.com.au.
Cocktail parties aren’t just about bite-sized morsels.
Small or petite plates can also be served to ensure
guests receive a substantial meal. These ‘mini
meals’ are more substantial than a canape item,
but not as involved as an entree. Imagine rich
beef casserole on creamy mash, risotto or sticky
roast duck, as described by Mustard Catering’s
Lisa Coyle, or “velvety spoonfuls of crème brulee,
tiny butter-crusted pecan pies, decadently rich
sticky date puddings served warm in Chinese tea
cups and intricate individual desserts.” Cocktail
Gastronomy’s Daniel Sterpini agrees. “Our food
ranges in size from an Asian-inspired tuna tartare
served with fresh cucumber and bonito aioli,
to wooden boards filled with wagyu burgers.
The focus on the canape is to get the tastebuds
dancing, which is a must at the start of any event.”
