PLACE In the heart of the Beaufort Street strip,
Must Winebar comprises an intimate Private
Dining Room and Champagne Lounge.
NUMBERS The Private Dining Room holds 46
seated or 70 cocktail-style. The Champagne
Lounge holds 16 seated or 30 lounge-style.
FOOD Chefs Russell Blaikie and Andre Mahé
create contemporary cuisine with a French
influence. Russell’s new cookbook, Must Eat, is
due for release in October.
DRINK A selection of 600 wines, plus Australian
and international beers and plenty of cocktails,
spirits, brandies and digestives await patrons.
DETAILS Must has won awards from the
Restaurant & Catering Association, Catering
Institute of Australia and Gourmet Traveller. It
also has a sister venue, Must Margaret River.

the great Australian bistros, no question.”
On the mezzanine level, the Private Dining
Room provides guests with a sneak peek into
the action-packed kitchen or the bustling bar
and bistro downstairs. For privacy, the opaque
glass doors slide across and enclose the area.
Challenging small venue conventions is
the Champagne Lounge. With magnificent
decor, this decadent space provides an event
experience that won’t soon be forgotten.
For private dining, the lounges disappear
behind cleverly concealed storage areas,
while a formal, long table and crystal-like,
Victorian-inspired chairs transform the space.
Must’s main bar area has recently
undergone refurbishments. Solid New Guinea
rosewood has been used throughout, more
seating has been added and a large circular
table has become a popular meeting point.
Chefs Russell Blaikie and Andre Mahé
base the cuisine on French bistro food with
a modern touch.
As well as private functions, themed events
are a regular fixture at Must and include
everything from a Ruinart Afternoon with live
jazz, to the Trans Tasman Pinot Dinner and
Semillon and Torbay Asparagus Week.
When privacy is required, the Private Dining Room’s opaque
glass doors slide across and the space is immediately converted.
The Champagne Lounge
